First ever Dyno run questions

A shop in my town has a DynoJet Dyno, and I can get 3 pulls for $65. I have installed a CSOne muffler, and I want to get before and after pulls to evaluate the performance gains when I have the ECU re-flashed.

What gear should I do the pulls in?

What smoothing factor is most commonly used to Dyno bikes on the DynoJet?

Any suggestions about how I should have the operator run the tests?
