But, the more I read about it and hear from COG'ers AND Doug that this IS NOT about learning to race, then I feel I am more of a fit. I really would like to learn new skills on my everyday bike; my Concours 14.

Learning the track before you get there frees you up to learn the drills. If you waste the whole morning learning the track you'll miss out on a whole Lot....
After drawing the track freehand see if you can run the track in your mind without looking at the map. Write down which turn comes first to quiz yourself. Like this: LLLRLLRLRLLLRR
Then draw in features you will see as your ride. To do this watch youtube vids. Then write down reference points if you like but that's not so important. Just get this far with your map so you don't get there saying "Which turn is next?" Bring your pen for the track walk. This allows you to do the drills.
